Estate at Hilton Singapore Orchard – Individually plated dishes at this best of land and sea buffet!

Dining at Hilton Singapore Orchard’s buffet restaurant Estate is like dining at someone’s house, a very large house at that. You sort of get lost in and amongst the rooms as you weave your way around the seemingly endless buffet line. (Read reasons why you need to dine at Estate)



Since 17th February, the dinner menu has been refreshed to a “Meat The Sea” theme, which showcases dishes from land and sea, alongside a curated selection of 8 individually plated Chefs signatures. Should you visit on Friday or Saturday, you will be able to enjoy the Premium Seafood and Wine diner buffet menu.

One problem when dining at a buffet is that after you’ve made your rounds, your plate ends up like a hot mess. And what if you’re a Hilton Singapore Orchard chef brimming with talent but no ala-carte restaurant in the property to showcase your artistic flair?

Estate has come up with the perfect solution for this by presenting 8 individually plated Chef’s Signatures. This innovative approach not only lets the chefs’ culinary talents shine but also presents diners with a visually attractive experience. And we all know we eat with our eyes first. Only one downside, you need to make multiple trips to the buffet line since you most likely can only carry 2 plates at a time.

  • King Crab Pasta – Sweet King Crab with creamy lobster bisque and smoky mussel ragout
  • Estate’s Surf & Turf – Tender Lumina New Zealand Lamb and fresh crab legs with crispy truffle potato pave
  • Roasted London Duck
  • Foie Gras – With teriyaki-glazed unagi and ponzu sauce
  • Wagyu Udon
  • Sze Chuan Prawn Wanton
  • Baby Octopus with Yunnan Fungus Rice
  • Singapore-Style Chili Prawn

It’s not often you find foie gras in a buffet line, but alas, it’s still not something you can embrace in unlimited quantities unless your cardiac doctor has given you the go ahead! My recommendation is to go for the NZ Lamb and crab legs. The quality of lamb from NZ needs little explanation, and the crab legs have been neatly shelled so all the easier to indulge.
I wish the lobster bisque in the king crab pasta was a bit richer though. I was trying to find the oomph, but it remained tantalizingly out of reach.

This gastronomic journey boasts an impressive lineup of premium partners, including

  • Lumina New Zealand’s 100% natural, free range, grass-fed lamb with the highest Omega-3 content in the market and twice the amount of polyunsaturated fats
  • Legendary 5- generations Les Huîtres Cadoret’s French oysters grown in the pristine waters of Brittany
  • Les Frères Marchand cheeses with 7 generations of heritage
  • Fresh local greens from Farmd and gourmet mushrooms from Fogo Fungi, Singapore’s largest indoor mushroom farm. 

The seafood line up is still pretty impressive even if you do not visit on Friday or Saturday.

Do not miss out on that seared wagyu sushi. SO GOOD.
