Masterclass with Rachel Allen!

I’ve been watching Rachel Allen on the BBC lifestyle channel for a number of years now as I love the style of her cooking programmes and of course her spacious kitchen. So it was quite surreal to be able to meet her up close and personal, and even share a baking class with her, as we did a couple of weeks ago at Palate Sensation.

Rachel Allen looks every bit like she does on TV and I love her accent! She is one of the friendliest chefs I have met, not at all scary and unapproachable like how you would imagine famous chefs to be. It’s even more interesting to watch her programmes now and I can point out “HEY I know that lady!”

1872 Clipper Tea infused mooncakes

Two weeks ago, I was invited to partake in a tea infused moon cake making class. I was in two minds whether to attend because although I love baking, it has never occurred to me to try making moon cakes. I was kind of intrigued by the fact that the moon cakes would be infused with tea as well. Tea and cake, just the very idea puts me in a relaxed mood. And hey, I could have a fine time sipping tea from one of my favourite brands while the Partner does the baking instead.

Baking Mad with Eric Lanlard

If you’re a fan of cooking and baking programmes on TV, you might just have heard of masterchef Eric Lanlard the Cake Boy. His TV programme, Baking Mad with Eric Lanlard, is currently on BBC Lifestyle (StarHub channel 432). I love this channel btw, as the focus is on British cuisine and cooking styles.

So it was kind of surreal to meet Eric up close and personal when he was in Singapore several weeks back. Eric is also a twice winner of the prestigious Continental Pâtissier of the Year at the British Baking Awards and has baked for likes of The Queen Mother, The Beckhams, Claudia Schiffer and Madonna. In Baking Mad with Eric Lanlard, he imparts invaluable skills to his audience by sharing tips on how to produce cakes and desserts that are not only glamorous but absolutely delicious.  Eric is also the founder of luxury cake boutique, Cake Boy in London.

We learnt to bake Eric Lanlard’s signature Dark Chocolate Moelleux at the Masterclass held at ToTT. The best way to learn how to make cakes is to just roll up your sleeves and get down to doing it! Watch the programmes first to see how the experts do it, but don’t forget to do the actual baking! Baking with the experts is very much different from reading recipes via a cookbook because very often, the experts drop hints learnt from the school of hard knocks, which are seldom shared in generic cook books! Trust me, I’ve gone to baking school so I know.

Baking Industry Training Centre – Bread Class Part 1

I told my Bread Chef that I’d write something about the Bread Class. That was 2 weeks ago. The post is still pending, no thanks to the 326 photos I took during the class itself. Ploughing through them would probably take longer than making a sponge and dough bread. But a promise is a promise, so I guess I’ll post some pictures of our beloved Bread Chef first. And also to check if anyone else in the school is reading this…..

This is our hardworking Bread Chef Mr Lim. Hardworking because he has to constantly watch over all our products, lest they burn, deflate, over proof, over beat or get themselves into some calamitous situation.
