Vietnam withdrawal symptoms got you down? That is certainly the case for me after my recent trip to Ho Chi Minh City (add me on Instagram!) back in December 2024. You might be delight to know that you can satisfy your cravings for Vietnamese food at Pan Pacific’s “Tastes of Vietnam” buffet!

From 7-30 March 2025, Pan Pacific Singapore’s award-winning buffet restaurant, Edge, invites guests to embark on a culinary journey with “Tastes of Vietnam”. Available exclusively for dinner from Mondays to Sundays, join Executive Chef Andy Oh and his Culinary Team as they collaborate with Pan Pacific Hanoi’s Executive Chef, Chef Zack Truong, and Junior Sous-chef, Chef Hoa Trung Kien, to showcase cherished Vietnamese signature dishes.

Appetisers
1. Beef Wrapped in Betel Leaves
2. Fresh Spring Roll with Prawn
3. Jelly Salad with Chilli and Lime

Soups
1. Southern-style Sour Chicken and Pineapple Soup
2. Sour Fish Soup with Local Herbs

Vietnamese Snacks
1. Fried Prawn Meat with Sugar Cane
2. Mini Savoury Pancakes with Prawn Coconut Cream



Vietnamese Favourites
1. Grilled Pork Belly with Fermented Rice and Galangal
2. Wok-fried River Prawn with Tamarind Sauce
3. Stewed Beef Shank with Ginger and Fish Sauce
4. Stir-fried Kohlrabi with Dried Shrimp
5. Vietnamese Noodle Broth “Pho” with Chicken & Beef (live station)
6. Fresh Noodle Broth with Snail (live station)

Desserts
1. Grilled Banana Wrapped in Sticky Rice with Coconut Sauce
2. Peanut Candy with Lotus Seeds
3. Yoghurt with Black Sticky Rice
4. Taro Sweet Soup

I’m no expert at Vietnamese food but I really must single out the Pho. That was the best Pho that I’ve ever had in Singapore. There was a delightful brightness and fragrance to the broth, and of course quality cuts of meat used, given that that’s in ample supply at Edge.

Make sure to also save space for the rest of the buffet which also includes freshly shucked oysters, snow crab legs, sustainable Boston lobster, tiger prawns, Pacific clams, half shell scallops, sea conch, black mussels, and crawfish.
