DOMO opens at Fairmont Singapore with jazzed up familiar favourites!

DOMO, the latest addition to Singapore’s dining scene has taken over the former Mikuni at Fairmont Singapore. It has a much more relaxed and convivial atmosphere, as compared to what I remember of the former tenant. Expect an East-meets-West culinary experience here, with the restaurant’s robata grill taking center stage, churning out dishes like tender octopus with shiso dressing and Japanese Wagyu beef with truffle teriyaki.



The menu also features starters like tuna tartare and Greek feta taco, as well as desserts that blend Asian and European flavors. With its focus on shared dining, DOMO’s signature dishes are designed to be enjoyed with company.

At the helm of DOMO is Rose Ang, a seasoned chef with 29 years of experience in the culinary world. Her impressive resume includes stints at NOBU Group and other top restaurants, as well as experience setting up restaurants in Europe. Illustrious names under her belt include Marriott Group, Four Seasons Hotel, Kempinski and Hyatt Hotels and Saffron Group of Restaurants in Baku Azerbaijian.

These are what I tried during the media tasting just before the restaurant opened. A lot of the dishes appear to be familiar favourites commonly found in other Japanese restaurants. I sense Chef Rose’s desire to elevate these dishes with extra flourishes/touches, while still maintaining a delicate balance that enhances without overwhelming.

Cold Appetiser – Salmon Tataki with Dijon Mustard Balsamic Glaze
Unfortunately not a great start as the glaze completely overwhelmed the delicate salmon flavour

Warm Appetiser – Wagyu Beef Kimchi Gyoza with Spicy Ponzu
I enjoyed the savoury flavour of the Wagyu Beef melding perfectly with the crunchy exterior of the gyoza. Didn’t quite detect the Kimchi flavour though.

Maki Rolls – Salmon California with Crabmeat, Cucumber, Avocado and Tobiko
Softshell Crab with Cucumber, Kimchi, Tobiko, Chili Mayo
Pleasant tasting and generously stuffed with ingredients.
Tempura and Fried Dishes – Fried Halibut with Yuzu Truffle Sauce
Possibly my most memorable dish after dessert. I am rather fussy with fish but this Fried Halibut was melt in the mouth tender to me. Despite the piquant sounding sauce, it was actually quite mild tasting, which is not a bad thing so as not to overshadow the delightful fish.



Robata – Miso Teriyaki Chicken
Pleasant tasting but not unlike similar chicken dishes found at other casual Japanese restaurants

Robata – Angus Tenderloin Beef Steak
Another enjoyable dish for me, done just right and flavourful. My dining companion commented it was a tad on the salty side, but I hadn’t noticed anything unusual when I was devouring it.

Desserts

Hands down, the Coffee Brulee and Coco Crumble won the dessert wars for me. That’s the big brown dish on the right. The flavours were intense and I enjoyed the textural contrast of the crumble with the velvety soft brulee so much! So good that I did not hesitate to scrape every last bit out of the dish!
