Is it White Asparagus season again??? Because if so, it’s time to eat more while it’s still available! If you love green asparagus, you will love the milder, sweeter and more tender white asparagus even more. If you don’t love green asparagus, why then you will change your mind after you’ve had the white version! Might I also add that asparagus is high in antioxidants, B vitamins and iron? Btw they are white simply due to the growing process where they are covered fully in the dark and hence they lack chlorophyll.
Mimosa Style Gratinated White Asparagus with Manchego Cheese & Chorizo Migas
I’ve always looked forward to enjoying these tasty morsels at Marriott, and this year is no different. They’ve streamlined the dishes available, so this year, there are just 3 simple dishes to choose from:
- Steamed White Asparagus with Poached Egg & Hollandaise Sauce ($22++ per portion)
- Mimosa Style Gratinated White Asparagus with Manchego Cheese & Chorizo Migas ($24++ per portion)
- Squid Ink and Scallop Ravioli with White Asparagus & Tomato Butter ($38++ per portion)
The white asparagus tasted great. They were fresh and bursting with sweet flavour at every mouthful. My favourite of the 3 was the squid ink and scallop ravioli, simply because I found the raviolis very enjoyable too. They looked really appetising on the plate, had a great bite to them and I loved the slight seafood broth encased within. If you want a main-course-ish type dish, this would be the one to go for, as opposed to the other 2 which are more like appetisers for sharing. But the other 2 is where you get the full flavour of the asparagus, either with a poached egg as a sort of ”sauce”, or with gratin and migas for a crumbly and cheesy kick.
